TOM’S HOLIDAY AND TAILGATE RECIPES

 

EGGS PORTUGUESE

Ingredients:

8 slices of bread, crusts removed, and cubed

1 and ½ pounds of breakfast sausage cut up in small pieces or cubes

¾ pound of shredded cheese – feel free to use more

4 eggs – I often add an extra one

2 and ½ cups milk

Dash of salt

2 teaspoons dry mustard

1 can cream of mushroom soup

¼ cup dry vermouth

 Butter a 9” x 13” baking dish. Line dish with bread cubes. Brown the sausage and drain. Spread the cheese over the bread cubes, add the sausage. Beat the eggs, add the milk and mustard, mix and pour over the cheese/sausage/bread mixture. Cover and place in the refrigerator overnight. The next morning, combine the soup and the vermouth, then pour it over the casserole. Bake at 400 degrees until done.

Serve with Danish or sweet rolls, lots of fruit, and champaign.

 A festive breakfast.

Makes 6 to 8 servings.

NOTE: This recipe comes from my late mother in law’s cookbook. It is a favorite among my wife’s family, especially during the holidays. As with all of my mother in law’s recipes, whenever I make the dish,  to me, it comes close, but never seems to be quite as good as hers.

 

OLD BAY SHRIMP FEST 7-1-22

½ cup Old Bay Seasoning, plus more to taste4 quarts water

1 can beer (optional)

8 medium red potatoes, cut in quarters ( whole baby potatoes can be substituted)

2 large sweet onions, cut in wedges

2 pounds lean smoked sausage, cut in 2 inch lengths

8 ears fresh corn, cut in half

4 pounds large shrimp in shells ( I usually use 26-30 count or 21-25 count, add an extra pound is 16-20 count are used)

  1. In an 8 quart pot, bring Old Bay, beer, water, and beer to a boil. Add potatoes and onions. Cook over high heat for 8 minutes.
  2. Add smoked sausage to the potatoes and onion. Continue to cook on high for 5 minutes. Add corn to the pot and continue to boil for 7 minutes. Add shrimp in shells and cook for 4 minutes.
  3. Drain the cooking liquid. Pour contents of the pot into a few large bowls or similar containers. Sprinkle with additional Old Bay.

This recipe makes 8 large servings. It is great to serve on a picnic table. Have some empty bowls available for the shrimp shells. Don’t forget to have lemons and cocktail sauce available to serve with the shrimp, and some butter for the corn and potatoes. If you want to kick the spice level of the shrimp boil up a bit, add a bag of Zatarain’s Shrimp boil and a few lemon quarters to the pot when you are adding the water and Old Bay.

 

 

 

Get ready for the Superbowl!

Tailgating Chili for a Crowd…..here is another favorite for the slow cooker…

Lightly spray the slow cooker with vegetable oil cooking spray. Brown two pounds of ground beef or ground turkey in a skillet and then place the ground meat in the slow cooker. Add 2 jars of salsa, 2 cans ( 14.5 oz each) of diced tomatoes, 2 cans (15 oz each) of red kidney beans (drained and rinsed), half a bag of frozen corn kernels ( be careful not to add too much, if you add the whole package, the chili will have too much corn), two tablespoons of ground chili powder, and two teaspoons each of ground cumin, garlic salt, and dried oregano. Stir all of the ingredients together, and cook on low for 8 hours. Garnish with shredded cheddar cheese. Don’t forget to brings bowls and spoons to the tailgate. This freezes well, so you can freeze any leftovers for a later meal.

 

Christmas Breakfast Menu and Recipe

I found this one in a book published by the editors of Bon Appetit, called The Christmas Season. The book was a birthday gift to my wife many years ago by family friends. I have made this breakfast many times over past holiday seasons and it is always a hit.

Candy Cane White Hot Chocolate

For the Scrambled Eggs, for 4 servings, you will need 6 large eggs (feel free to throw in an extra one or two, so seconds are available), a half stick of cream cheese ( I use the light or Neufchatel type), ¼ cup of chopped green onions, ¼ cup chopped fresh basil, 2 tablespoons chopped parsley, 2 tablespoons milk (sometimes I substitute half and half for the milk), 2 teaspoons chopped fresh oregano (or you can substitute ½ teaspoon dried oregano), and some butter. Beat the eggs in a large bowl with the milk to blend. Then blend in the cream cheese and the herbs. Season with salt and pepper. Melt the butter in a large skillet, and then add the egg mixture. Cook until the eggs are scrambled, which takes about 4 minutes. For the French Toast, for 4 servings, you will need 3 large eggs, 6 tablespoons half and half, 1 tablespoon sugar, 3 teaspoons ground cinnamon, ¼ teaspoon vanilla extract, some butter, and 4 slices of thick bread, multigrain panini bread works really well. I also like to add some egg nog (see my recipe) in the batter for some extra flavor, but be careful not to add too much. Beat the eggs, half and half, egg nog, sugar, 2 teaspoons cinnamon, and the vanilla extract. Place the mixture in a glass baking dish. Add the bread and turn to coat. Cover and chill so the bread absorbs the egg mixture, at least 30 minutes or up to one day. I usually make this in the evening and let it chill overnight. Melt butter in a heavy large skillet over medium heat. Sprinkle the remaining cinnamon over the bread, and add the bread to the skillet. Cook until golden and cooked through, about 3 minutes per side.

The Hot Chocolate is as much a dessert as it is a beverage. For 4 servings, you will need 4 cups milk, 3 ounces ( I usually add an additional ounce or two) of a good quality white chocolate chopped ( I take one of the bakers bars of while chocolate and break it into pieces), 1/3 cup of crushed red and white striped candy canes or hard peppermint candies, and a pinch of salt. Bring the milk to a simmer in a heavy medium to large saucepan. Reduce the heat to medium-low. Add the white chocolate, the crushed candy, and salt. Whisk until smooth. Add some peppermint schnapps if desired. Ladle hot chocolate into mugs, dividing equally. Top with whipped cream, and add a candy cane to the mug for a nice presentation.

TOM’S CHRISTMAS CHEER EGGNOG

For one gallon, a pint of rye whiskey and a pint of rum, two quarts half and half, a couple of tablespoons of sugar to taste, nutmeg to taste, and a splash of brandy. I usually make three gallons so I use two 750 ml bottles of gold Bacardi rum, and two 750 ml bottles of George Dickel Rye Whiskey, 6 quarts of half and half, three dozen eggs, 5 to 6 tablespoons of sugar to taste, nutmeg, and brandy. Separate the egg yokes from the whites. Beat the yokes and sugar together with an electric mixer. Add the alcohol, and half and half. Add nutmeg to taste. Add more sugar to taste it needed. Continue to beat the mixture with the electric mixture and stir with a large spoon as well. Beat the egg whites and fold them in with the mixture. Add a splash or two of brandy. When I bottle the egg nog, I add some extra nutmeg to each bottle and some brandy as a floater. You can use the empty rum and rye bottles as well as the empty half and half bottles to bottle the egg nog.

 

Tailgating With Tom

Tom’s Corned Beef Recipe:                                                              3-15-22

4 large carrots peeled and cut into pieces or equivalent amount of baby carrots 10 baby red potatoes (Sometimes I do a mix of regular and red potatoes) 1 onion peeled and cut into pieces ( I did two onions this year, the second onion was a smaller one, I thought the extra onion added some good flavor) 2 stalks celery cut into pieces Y2 head cabbage, cut and shredded. (I have been using Napa Cabbage instead of regular cabbage, it is a bit more expensive, but I like its mild flavor) Corn Beef Brisket (I like to use the flat cut, about 3 -4 Ibs)

Place carrots, onions, potatoes, and celery in slow cooker

Pour in 4 cups of water Place Corned Beef over top of vegetables and water Pour contents of spice packet over corned beef (If the corned beef does not come with a spice packet, add McCormick Pickling Spice. I actually added a little extra pickling spice on top of the spice packet) Cook on high for eight hours. During the last hour of cooking, add the cabbage. I also add some parsley in addition to the cabbage.

I like to save the broth. For leftovers, I will heat up the vegetables and some corned beef in the broth and place in a bowl to eat like a soup. The broth is really good after all the flavors have set in. I also made corned beef hash with the leftovers. I took some frozen potatoes O’Brien hash browns, added some of the potatoes that I cooked with the corned beef and then added some corned beef that was cut up in small pieces, and fried everything down. It is really good with poached eggs.

Slow Cooker Beef Brisket                                                                               10-8-21

 

 

Take about a 3 lb cut of beef brisket. Sprinkle some black pepper on it.  Add some Montreal Steak Seasoning for extra flavor. Add about a tablespoon of olive oil to a large skillet, and brown the beef in it, for a couple of minutes per side. Once the beef is browned, place the brisket in a slow cooker.

 

Cup up a large red onion in slices. Place it in the pan with the olive oil, and cook on medium-high heat until the onion softens. Then put the onions in the slow cooker with the beef.

 

Mix a bottle or can of Guinness beer with a bottle of chili sauce, and pour it over the beef brisket.

 

Cook on low for 6 to 8 hours.  If pressed for time, cook on high for one hour and then on low for about four hours.

 

When the beef brisket is done, slice it against the grain in thin slices. Save the sauce to serve with the brisket.

 

If the brisket is going to be taken to a tailgate where there is no electricity available, put the beef and sauce in  a large pot for transport. Then, heat the pot of beef brisket and sauce on the grill at the tailgate party.

 

This makes a great juicy sandwich on a Kaiser Roll. It can also be eaten on a plate with a knife and fork. Either way, it is delicious and sure to please the crowd.

 

 

 

 

Caribbean Jerk Chicken                                                                                   10-15-21

 

A quick and easy recipe.  All you need are three ingredients, a zip lock

bag, and a grill.

 

 Place some boneless, skinless chicken breasts in a gallon size zip lock bag. It is best to use the “thin cut” breasts or chicken cutlets because they will cook through easier and faster on the grill. I usually plan on two pieces of chicken per guest. Sprinkle a lot of McCormick Caribbean Jerk Chicken seasoning in the bag. Add enough extra light olive oil to the bag so that all the chicken breasts are covered. Squeeze the bag a few times to make sure the seasoning and oil cover all the pieces of chicken. I usually double bag the chicken in case a leak develops in the first bag.

 

The chicken can be cooked right away after it is marinated, but I usually marinate the chicken the night before the game and place the bag with the marinated chicken in the refrigerator overnight. If you are going to be cooking the chicken at the tailgate, place the bag in a cooler for transport.

 

 Place the chicken on the grill and cook until done.

The chicken can be eaten as a sandwich on a roll. They are really great with melted provolone cheese and some lettuce and mayonnaise on the sandwich.  They can also be eaten on a plate with a knife and fork for guests who do not want any bread.

 

 

 

Taco Salad                                                                                           10-22-21

 

Cook a pound or two or ground beef and/or ground turkey in a skillet. Throw

in some peppers, onions, salsa, taco sauce, taco seasoning, Mexican

seasoning, or any combination of them.

 

Crunch up some tortilla chips and place them in a large bowl.

 

Dump the ground beef mixture over the grounded up chips, and then throw some

shredded cheese over the ground beef. Add some more crunched chips.

 

Add some shredded lettuce, sliced green onion, sliced jalapeño peppers,

sliced cilantro leaves, salsa, and some more shredded cheese to the bowl

until it is about full.

 

Add a large round scoop of sour cream in the middle of the bowl on top of

the lettuce mixture. Garnish the sour cream with finely chopped cilantro

leaves and/or finely chopped green onion.

 

Place some tortilla chips around the sides of the bowl.

This can be eaten as a salad or a dip, so bring some extra chips to serve

with it.

 

This is a great dish to fully prepare at home and bring to the tailgate when

you are not going to be doing any cooking on site.
